Nelson Mandela Day celebrations? Ideas for the perfect menu.

Mandela Day is happening on Tuesday the 18th of July, and as South Africans, this day holds huge significance. We celebrate the life of our inspirational past president Nelson Mandela, who paved the way to freedom for all South Africans and the Nelson Mandela Foundation encourages each person to give up 67 minutes of their time (one minute for every year of Mandela’s public service) for the greater good, through acts of kindness. So why not host people in your home for a hearty and delicious meal? Or put together a corporate lunch to celebrate this important day at the office?

Cooking a great meal can be loads of fun but it’s also time-consuming. We know you don’t get the day off work, so we’ve come up with a few super simple catering ideas for your warming Winter menus.

Four menu ideas for your office celebration

1. Oven roasted Mediterranean chicken

This dish is so easy to prepare! Surround your chicken breasts with capers, olives and baby tomatoes, and pop it into the oven until it’s ready! Serve this with fragrant rice, studded with sundried tomatoes and dates to highlight the Mediterranean flavours. To finish off strong, serve a sweet and spicy compote of apricots and figs (which can be prepared the night before), heated and placed on top of double thick Greek yoghurt.

2. For the seafood lovers, baked linefish

Another super simple dish to prepare when your time is minimal. Rub your fish with lemon juice and olive oil, top with anchovies and place into the oven to bake. Serve this dish with rosemary infused lentils (which you can also prepare the night before, and heat up), as well as stir fried spinach. Finish off with a no-bake chocolate cake, filled with cherries, walnuts and chunky pieces of biscuit.

3. If you’re a vegetarian

Caramelized onion tart, served with dollops of goats cheese and topped off with olives is the yummiest of dishes. Serve these savoury tart slices with a simple Greek salad. For dessert, fresh orange segments served with a warm dessert wine and rosemary infused syrup. Perfection!

4. Meat lover? Look no further!

Meatballs served with buttery noodles and a basic Napoletana sauce will bring a smile to your face, guaranteed! Or go with one of Mandela’s personal favourite - spaghetti Bolognese  made with curried mince. The perfect ending to this meal is a banana bread pudding, with lashings of dark rum.
